Description of a Wine Dinner (continued)Prepared by Chef Mike from Chef Mike's Nouvelle CateringEntrée
Wine: Dry Comal Creek Black Spanish (New Braunfels, TX) Background: Dry Comal Creek is right around the corner on Highway 46 – owners Bonnie and Franklin Houser. This is the initial release of this wine – 3 days ago! The Black Spanish grape is also know as Lenior or Jacquet and is typically planted in regions with high Humidity (such as near Houston). It is also resistant to Pierce’s disease which has plagued many of the wineries in Texas. These are from 4-5 year old vines. They have about 150 cases available. It is best known for ports so look for them next year. Val Verde, the oldest winery in Texas, is known for their port. Read the back of the bottle for info on the origin. Description: Won two silvers at Grapevine – “Dry red wine with a slight dark berry smell with low tannins and a strong finish. It will be like nothing you have ever tasted.” – Franklin Houser.
Dessert
Wine: Quady Electra – Orange Muscat 2000 (Madera CA) Background: This wine is named after the electric feeling you feel on the tip of your which is where your sweet taste buds are highly concentrated. Description: Picked this to match the lightness of the mousse/fruit combination and the orange flavor of the Grand Marnier. The wine is flowery fragrant, sweet, taste of peach/orange, and yet delicate.
