Description of a Wine Dinner (continued)

Prepared by Chef Mike from Chef Mike's Nouvelle Catering

Salad

Chef Mike prepared a Salad of Tomatoes, Mozzarella, and Basil.

Wine: Alexander Valley Sin Zin (Healdsburg CA) Background: Zinfandel was the most widely planted grape in California until 1998 when Cab overtook it. Some of the oldest vines in CA are Zinfandel like the Grandpere of Renwood which was planted in 1866. White Zinfandel was introduced by Sutter Home in 1972 and currently outsells Red Zin. Red Zinfandel is made from the same grape as white zinfandel – the skins are not separated from the juice like other red wines giving it color, tannins, etc. Red Zin is also known as the Italian grape primitivo.

Description: Prominently displaying flavors of blackberry, black cherry, plum and back pepper. Andrea Immer thinks that home grown tomatoes (she calls them shirt soakers) are the ultimate food to pair with almost any kind of wine - every bite and sipe packs a punch of flavors.

2nd Course

Shrimp Balls (include the Cajun Holy Trinity)

Wine: Domaine Pichot Vouvray (France)

Background: Vouvray (called the chameleon grape since it can be dry, semi-sweet, or sweet) is obviously grown in France, specifically in the Loire Valley south of Paris. Vouvray is another name for the Chenin Blanc grape which is grown here in Texas by a lot of wineries, the main white wine in South Africa, and was the main white grape in California in the 70’s. Description: Flavors of ripe melons and minerals; slightly sweet in the finish.
